Have Yourself a Very Nutty Christmas everyone 😀

Hi everyone,

Lately in my vegan Quest, I’ve been wondering how can I make this Christmas that little bit better? Naturally, nearly everyone turns to a good old turkey or goose for Christmas but what all of us Vegans? This is when I came up with the idea of a nut roast. Granted, many of these recipes are bland and boring so this is when I went on a Zest Quest to come up with something that was both hearty an satisfying. While I do miss the thought of turkey, this nut roast more than makes up for it and is super tasty with my vegetable gravy too! (recipe coming soon!) In this recipe, I’ve made the nuts a variety of sizes as I like the ground nuts to fill out the dish while it’s also good to have some super crunchy nuts in there too so it doesn’t feel like you’re eating baby food. For me, the carrot and lentils keeps this dish lovely and moist and are a subtle contrast to the crunchy nuts.

You’ll also note that I’ve used a small quantity of chia egg here. This just holds the recipe together a little better and helps to keep this dish fully vegan yeyyy 😀 Anyway, enough of my chitter chatter. Here’s the recipe 😀

Vegan and Gluten Free Nut Roast

Serves 2 as a starter

 

Ingredients

25g cashews

25g walnuts

1tbsp chia seeds mixed with 4 tbsp water

½ medium grated carrot

2tsp red lentils, soaked overnight and then cooked until soft.

Pinch of ground garlic powder (found in most good supermarkets or online at realfoods.co.uk)

Pinch of onion granules (found in most good supermarkets or online at realfoods.co.uk)

Pinch of dried sage

Pinch of dried thyme

Pinch of dried majoram
