Have Yourself a Very Nutty Christmas- Vegan and Gluten Free Nut Roast *UPDATED*

*UPDATE* I’d like to thank everyone for all of their recipe suggestions- I’ve been truly inspired 😀 I’m sure you’re wondering though how did I do it? Well, all will be revealed below!

Vegan and Gluten Free Nut Roast

Serves 2 as a starter

 

Ingredients

25g cashews

25g walnuts

1tbsp chia seeds mixed with 4 tbsp water

½ medium finely grated carrot

2tsp red lentils, soaked overnight and then cooked until soft.

Pinch of ground garlic powder (found in most good supermarkets or online at realfoods.co.uk)

Pinch of onion granules (found in most good supermarkets or online at realfoods.co.uk)

Pinch of dried sage

Pinch of dried thyme

Pinch of dried majoram

 

Method

  1. Using a food processor or rolling pin, bash ¼ of the nuts until they’re small and fine.
  2. In a separate bowl, crush the remaining nuts into slightly bigger pieces- you want this to be crunchy after all!
  3. Add the rest of the ingredients including the fine nuts from the first step and mix well.
  4. Turn this out into a loaf pan and cook at 160 for about 20-25 mins.
  5. The top of the nut roast should be slightly golden when cooked.
  6. Et voila your nut roast is complete 😀
