Depression Dusting Ginger Biscuits

Morning beautiful Zest Questers :D,

Lately I’ve been after some biscuits-but not just any kind of biscuits…its been all about the ginger lately. Without giving you an essay, I believe ginger should be the king of all biscuits. It reduces inflammation (perfect for helping to beat depression) among a whole host of other things so I really believe this is the perfect place to start. The thing is though, I’ve been having real trouble lately making them super crunchy (without burning them haha) so this is where I’m calling on you Zest Questers! Below I’ve given the recipe I’m using but any tweaks to help me out would be PERFECT! Please leave your thoughts in the comments below 😀

 

Depression Dusting Ginger Biscuits

Makes 4

100g buckwheat flakes, ground to a flour

30g maple syrup

1tsp coconut sugar

2tsp chopped ginger

½ tsp ground ginger

1 quantity flaxegg (I used chia as I was out of flax)

 

  1. Mix all the ingredients in a bowl.
  2. Spoon dessert sized spoonfuls onto a baking sheet lined with baking parchment
  3. Bake for 15 mins at 180c
