I have a dilemma. A dilemma in the form of Christmas cake. Being super busy with the planning of café Zest and Fresh I have totally forgotten to make on this year and it’s kinda become a family tradition. I’ve tried lots of ways with chia and dates but each time it comes out gluey and dough like which is NOT what we want here at café Zest and Fresh! Below I’ve listed some of the ingredients I’ve tried using but any tweaks to this would be greatfully received!
100g ground almonds
100g dates, soak overnight and whizzed to paste
150g dried fruit (I used sultanas as raisins here)
25g cut mixed peel
25g natural colour glace cherries
- Mix all the ingredients in a bowl.
- Fill a silicone baking tin ¾ full
- Bake for 30-40 mins at 180c (356f)
- Remove from oven once a skewer inserted comes out clean
- Leave to cool
