Depression Dusting Ginger Biscuits

Lately I’ve been after some biscuits-but not just any kind of biscuits…its been all about the ginger lately. Without giving you an essay, I believe ginger should be the king of all biscuits. It reduces inflammation (perfect for helping to beat depression) among a whole host of other things so I really believe this is the perfect place to start. The thing is though, I’ve been having real trouble lately making them super crunchy (without burning them haha) so after a little trial any error they came out PERFECT. The key here is the maple syrup to make a sticky mixture- granted they will be a little squishy when they first come out. However, try your hardest to leave them to cool down and they’ll turn out to be the perfect crunchy biscuits!

I’ve dunked mine into some homemade chocolate with a pinch of sea salt (although you can buy a ready made bar) for an extra lift but if you prefer chocolate without the salt that’s cool too. What I really would stress thought is that it’s at least 70% dark to reap the most benefits both health wise and for flavour!


Depression Dusting Ginger Biscuits

Makes 2

100g buckwheat flakes, ground to a flour

40g maple syrup plus extra if needed to make it stick (depends on the roughness of your flour)

1tsp coconut sugar

2tsp chopped ginger

½ tsp ground ginger

1 quantity flaxegg (I used chia as I was out of flax)


Topping (or dunking :P) 

1 bar of at least 70% dark chocolate (optional) OR

1 quantity of my homemade chocolate (optional)


  1. Mix all the ingredients in a bowl. The mixture should be slightly sticky as this will prevent the biscuits from crumbling later.
  2. Spoon dessert sized spoonfuls onto a baking sheet lined with baking parchment. Compact them onto the spoon first before sliding off onto the tray and making into neat little round oval shapes.
  3. Bake for 15 mins at 180c turning half way through baking
  4. Allow to fully cool as they’ll firm up
