Marvellous Mushrooms- for when you NEED a sensory overload!

Serves 1

So lately, I’ve had a lot going on L I’ve had countless trips to the doctors and psychiatrists who can’t seem to fix me and all my problems (which I believe stem from my rape attack-more on this coming soon!) I firmly believe I need to go private. The thing is though, this goes against the terms of my agreement between me and the finance office to stay away from places that are unfamiliar to me. So what am I to do?! I wonder if they’ll grant me special permission given my medical circumstances…?

Anyway, while all of that is going on, I’ve been baking rather a lot. This recipe is inspired my one of my idols Ella Mills. I hope to work with her someday but until then, I bring you some creamy mushroom lushness topped off with avocado butter. Both of these combinations bring a comforting creaminess that I often miss being gluten free and vegan (trying this vegan thing during January- I’ll keep you updated)

Ingredients

2tbsp Olive oil

½ a small onion, finely sliced

125g button mushrooms (or any mushrooms you have), roughly sliced

Lemon juice

Garlic, finely chopped

3tbsp dairy free coconut yogurt OR a pot of dairy free coconut lemon (recipe coming soon! If you do use this, leave out the lemon juice)

A couple of slices of toast (bread recipe coming soon but otherwise shop bought gluten free is perfectly fine :D)

For the avocado butter

½ avocado, skin and stone removed.

splash of lemon juice

1 garlic clove, finely chopped

1tbsp Parsley

Salt and pepper to taste

 

Method

 

  1. Heat the olive oil in a pan and add the finely sliced onion. Fry until soft.
  2. Add the mushrooms, lemon juice and garlic and fry for about 5 mins.
  3. While this is frying, mash the avocado until it’s nice a soft and pretty much a pulp.
  4. Add in the lemon juice, parsley and garlic and stir.
  5. Toast your bread.
  6. Add the yogurt or coconut pot mixture to your pan and stir it in.
  7. Pile on the avocado (I like mine quite thick tee hee)
  8. Top with your mushroom mixture

Et voila! You’re all set 😀
