Doing the Waffle dance: ‘Life of an Insomniac’ Dancing on my own

3am…I never was looking for a good night’s sleep anyway!

This is typical for someone with depression but that’s ok- here’s how my waffles will fix it!

 

Ingredients

250g butter or dairy free margarine, melted

4 eggs

*75g caster sugar* updated after a suggestion from our recipe bloggers

125ml lukewarm milk

200g plain flour

1 tsp baking powder

 

Method

  1. Separate the eggs and whisk the egg whites. Save the egg yolks for a tasty treat for another day. See my recipe suggestion here (coming soon!)
  2. Gradually whisk in all the other ingredients saving the baking powder until last.
  3. Cook in a waffle iron.

Note: I’ve found that the mains operated ones (much like in the style of a toastie maker) work best- can be found in Lidl for £15.99 (correct at time of publishing)
